Dissolve the yeast in water and leave for 10 minutes to activate. Then add the flour little by little and stir. Leave the dough to rise, or if you have the opportunity - cook overnight in the refrigerator. Prepare a Kamado BONO barbecue for indirect cooking, light the charcoal with electric lighter, place a stainless steel grill, baking stone and wait until the temperature rises to 300 degrees. Close the upper and lower air dampers to keep the temperature even. Divide the dough into two parts. Roll out one part to a size that completely covers the greased cast iron skillet and form thick edges by hand. Place sliced mozzarella cheese, grated Gouda cheese, salami and boiled ham on top of the dough. Spread with tomato sauce, arrange fresh basil leaves, sprinkle with oregano. Bake on a hot grill for 4-5 minutes.
