Ingredients

  • 5 liters of water
  • 500 g of salt
  • 150 g of sugar
  • 150 ml of acetic acid (70%)
  • 5 cloves of garlic
  • 4 bay leaves Black and allspice peppercorns
  • If it is difficult to buy 70% acetic acid, you can use 9% vinegar. The recipe will differ slightly:
  • 5 liters of water
  • 600 g of salt
  • 180 g of sugar
  • 1170 ml of 9% vinegar
  • 6 cloves of garlic
  • 4 bay leaves Black and allspice peppercorns

 

Recipe

  1. Boil the water. Dissolve the salt and sugar, then add the pepper and bay leaves.
  2. Let it cool, add the coarsely chopped garlic, and pour in the vinegar. The marinade is ready. Keep the product in the marinade for 12-24 hours. The longer you keep it, the stronger the vinegar taste will be.
  3. This marinade can be used for fish, pork, and poultry before smoking.
