Ingredients

  • For the Batter:
  • 200 g flour
  • ½ tsp ground cinnamon
  • 115 g room temperature butter
  • 150 g sugar
  • 3 large eggs
  • 125 ml milk
  • 1 tsp vanilla extract (if you don’t have natural vanilla, avoid using artificial flavoring; it’s better to use none)
  • For the Apple and Caramel Layer:
  • 5-7 medium-sized apples
  • 55 g butter
  • 110 g brown sugar

Recipe

  1. Upside-Down Apple Cake: Cake Batter:
  2. In a bowl, combine softened (room temperature) butter and sugar. Beat until fluffy. Then, add the eggs one at a time, beating well after each addition.
  3. Add vanilla extract, flour, and milk to the butter and egg mixture.
  4. Mix everything at low speed until well combined.
  5. Apple and Caramel Layer:
  6. Peel the apples and cut them into quarters. Generously season with cinnamon.
  7. Prepare the Kamado BONO grill for indirect cooking, light the charcoal with a fire starter, place the stainless steel grates, and wait until the temperature reaches 130°C.
  8. Adjust the top and bottom air vents to maintain a consistent temperature.
  9. In a skillet or baking dish, add butter and sugar. Place the skillet on the grates and stir until the sugar melts. Add the apples and cook until they soften, about 10 minutes. Place a baking stone on the grates, open the vents, and increase the temperature to 180°C. Spread the batter evenly over the apples. Bake for 30 minutes.
  10. Once the cake is baked, remove it and let it cool. Invert the cake onto a plate.
  11. Enjoy your meal.
