Ingredients

  • 1 kg beef neck
  • 100 g smoked pork bacon
  • 1/4 cup flour
  • 2 cups red wine
  • 300 g black mushrooms
  • 4 carrots
  • 1 onion
  • 4 garlic cloves
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 500 g small red potatoes

Recipe

  1. Beef stew in red wine sauce: Prepare the Kamado BONO grill for direct cooking. Light the charcoal with a starter, place the stainless steel grates, and wait until the temperature reaches 160°C. Partially close the top and bottom air vents to maintain an even temperature.
  2. Chop all the ingredients.
  3. In a pot, sauté the bacon in a splash of oil, then add the onions. Once they are nicely browned, add the beef.
  4. Season with spices. Pour in the wine, broth, and tomato paste. Stir, then add the mushrooms, carrots, and potatoes. Simmer for 2 hours.
