Ingredients

  • For the starter:
  • 100 ml warm milk
  • 1 tbsp flour
  • 1 tbsp sugar
  • 7 g dry yeast
  • For the filling:
  • 500 g cottage cheese
  • 1 egg
  • 3 tbsp sugar
  • Lemon or orange zest
  • For the dough:
  • 300-350 g sifted flour
  • 70 g melted butter
  • 70 g sour cream
  • 1 tbsp sugar
  • Starter mixture
  • For the glaze:
  • 150 g sour cream
  • 1-2 tbsp sugar
  • Vanilla

Recipe

  1. Cottage cheese buns with sour cream glaze: prepare the Kamado BONO grill for indirect cooking, light the charcoal with a fire starter, place the stainless steel grates and a baking stone, and wait until the temperature reaches 180°C.
  2. Adjust the top and bottom air vents to maintain a consistent temperature.
  3. 1. Dough Starter:
  4. Dissolve the sugar and yeast in warm milk, mix in the flour, and let it sit for 20 minutes to allow the yeast to activate.
  5. 2. Filling:
  6. Mix all the filling ingredients in a bowl.
  7. 3. Dough:
  8. Cream the sugar well with butter. Gradually add the flour and knead the dough. Add the flour slowly, only until the dough no longer sticks to your hands and kneads well. Let the prepared dough rise in a warm place until it doubles in size.
  9. Roll out the dough into a rectangle, spread the cottage cheese filling, roll it up, and cut into slices. Place the buns in a baking tray or dish and bake at 180°C for 25 minutes.

  11. Mix the glaze ingredients in a bowl with a spoon.
  12. Once the buns are baked, pour the glaze over them, spread it evenly with a brush, cover with foil or a towel, and let the glaze soak in while the buns cool.
