Prepare the Kamado BONO grill for indirect cooking, ignite the charcoal starter, place the stainless steel grates, and wait until the temperature reaches 200 degrees Celsius. Adjust the upper and lower air vents to maintain a steady temperature.
Separate the egg whites and beat them until stiff peaks form. In a bowl, whisk the egg yolks with milk, flour, and vanilla sugar. Gently fold in the egg whites and 3 tablespoons of cooled, melted butter using a spoon.
Grease cast iron pans with butter, pour in the batter, and bake for about 35 minutes. Serve the pancakes with your favorite ice cream and berries.
