Ingredients

  • 3 tablespoons olive oil
  • 300 g Italian sausages, thickly sliced
  • 6 boneless, skinless chicken thighs, cut into smaller pieces
  • 2 red onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 red peppers, sliced
  • 2 sprigs of rosemary
  • 150 ml white wine
  • 2 teaspoons white wine vinegar
  • 300 g baby potatoes, halved
  • 250 ml broth
  • Chopped parsley

Recipe

  1. Italian sausage and chicken stew: Prepare the Kamado BONO grill for direct cooking, light the charcoal with a fire starter, cover the grill, and wait until the temperature reaches 180 degrees Celsius. Adjust the top and bottom air vents to maintain a consistent temperature. Place a pot in the grill over direct heat and let it heat up well.
  2. Add a splash of oil, then add the sausage and chicken cubes, searing them until browned.
  3. Remove from the pot and set aside. Add the onion, garlic, and peppers to the pot and sauté for 5 minutes until slightly softened. Add rosemary, white wine, and vinegar, allowing it to simmer for a minute. Then, return the chicken and sausage to the pot. Add the potatoes, broth, and peppers. Season with salt and simmer for 40 minutes, until the potatoes are cooked and the sauce thickens slightly. Serve sprinkled with parsley.
