Ingredients

  • 3-4 tbsp of oil
  • 1 cup of chopped cherry tomatoes
  • 1 tsp chili powder
  • 2 tsp curry powder
  • 1 tsp cumin
  • 2 tsp onion powder
  • 3 minced garlic cloves
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 can of chickpeas
  • 3/4 cup of cooked corn
  • 1 cup of diced carrots
  • 1 can of coconut milk
  • 1.5 cups of spinach
  • Cilantro for garnish

Recipe

  1. Chickpea curry with spinach: Prepare the Kamado BONO grill for direct cooking, light the charcoal with a fire starter. Place a cast iron frying pan on the grill ring.
  2. Heat the oil. Pour in the tomatoes and spices, stirring and simmering for 3-5 minutes.
  3. Add the garlic, chickpeas, and corn, mix well, and pour in the coconut milk.
  4. Stir and cook over low heat for about 20 minutes. Add the spinach, stir again, and let it simmer a little longer.
  5. Serve with rice.
  6. Enjoy your meal.
