  • 3 eggplants
  • Salt

Recipe

  1. Grilled eggplant: prepare the Kamado BONO grill for direct cooking, light the charcoal with a fire starter, and place the stainless steel grates. Wait until the temperature reaches 200 degrees Celsius.
  2. Adjust the top and bottom air vents to maintain a consistent temperature.
  3. Slice the eggplants vertically, but not all the way through, to create “fans.” Sprinkle with salt and let them “rest” for 20 minutes.
  4. Carefully remove the salt, pat dry, brush with oil, sprinkle with basil, and grill for 20 minutes, turning every 5 minutes.
  5. Finish by seasoning with Parmesan cheese.
  6. Enjoy your meal.
