  • 400 g chicken drumstick meat
  • 1 ripe mango
  • 2 garlic cloves
  • 1 lemon
  • 4 tbsp Greek yogurt
  • 2 tbsp mayonnaise
  • A splash of teriyaki sauce
  • A splash of sesame oil
  • A splash of hot sauce
  • A pinch of chicken seasoning
  • A pinch of salt and ground black pepper

Recipe

  1. Chicken skewers with mango mayonnaise: Prepare the Kamado BONO grill for indirect cooking, light the charcoal using a fire starter, place the stainless steel grates, and wait until the temperature reaches 150 degrees Celsius. Close the top and bottom air vents to maintain an even temperature.
  2. Cut the chicken into equal pieces, season with spices and salt, and drizzle with sesame oil. Mix everything well and let it marinate for an hour. Puree the mango fruit, add Greek yogurt, grated garlic cloves, mayonnaise, season with salt, and add a bit of lemon juice and hot sauce. Blend everything into a smooth, fluffy mixture.
  3. Thread the chicken pieces onto wooden skewers and grill for about 15 minutes. Near the end of grilling, brush several times with teriyaki sauce.
  4. Serve the grilled chicken with the prepared mango mayonnaise.
