Prepare the Kamado BONO grill for direct cooking. Light the charcoal with a starter and place the stainless steel grates on top. Wait until the temperature reaches 200°C (392°F). Adjust the top and bottom air vents to maintain an even temperature.
Place a cast iron frying pan on the grates and add oil. Heat the frying pan. Add the beets and sauté for 3-4 minutes. Pour in balsamic vinegar and wine vinegar, and add sugar. Continue to cook, stirring occasionally, until the liquid evaporates, the sugar dissolves, and the beets caramelize.
