Chicken Nuggets Stuffed with Mozzarella Cheese

Ingredients

  • 500g small/inner chicken fillet
  • 1 Mozzarella cheese
  • 2 cups fennel breadcrumbs
  • 1 tbsp garlic powder
  • 1 tbsp basil seasoning
  • 1 tbsp parsley seasoning
  • 1 tbsp salt
  • 0.5 cup Parmesan cheese (grated)
  • 0.5 cup flour
  • 2 eggs
  • 250g sunflower oil

Recipe

  1. Chicken Nuggets Stuffed with Mozzarella: Prepare the Kamado BONO grill for direct cooking, light the charcoal with a fire starter, cover the grill, and wait until the temperature reaches 200°C. Adjust the top and bottom air vents to maintain a consistent temperature. Place a kazan (cast iron pot) on the grill over direct heat, add oil, and heat it well.
  2. Cut the chicken fillet pieces in half, make a deep cut to form a pocket. Slice the Mozzarella cheese into strips and insert one strip into each chicken fillet pocket. In a bowl, mix fennel breadcrumbs, garlic powder, basil, salt, and finely grated Parmesan cheese. Pour flour into a separate bowl. In another bowl, beat the eggs. Place a deep cast iron skillet on the grill and wait until the oil is well-heated. Dredge the chicken pieces in flour, then in the beaten eggs, and finally in the fennel breadcrumb mixture. Fry for a few minutes on each side until nicely browned.
